Every dish begins with prep work. This goes for sauces as well. Benihana preps, peels and chops their signature sauce ingredients fresh every morning. Insider tip on lemon juicing: Peel the lemon first. Then squeeze the juice out. Don’t squeeze too hard, though! Over-squeezing will give the lemon juice an overly bitter taste.
Peel the skin off the garlic.
Can’t forget the mustard powder!
